Bulk-Friendly Banana Baked Oats

Bulky Baked Banana and Berry Oats

Baked oats are the perfect way to turn your average porridge routine into a warm, comforting treat. This recipe is super easy to throw together and uses ingredients you likely already have on hand. Plus, it's completely customisable to your preferences!


As a Plymouth Personal Trainer, making quick but satisfying meals is imperative to making sure i remain fuelled throughout the day. This is why this bulky baked oats recipe is protein filled, fruit filled and delicious. Today, we're going for a classic combination: banana, peanut butter and berries. But feel free to get creative with your toppings – chopped nuts, chocolate chips, or even a drizzle of agave syrup would be delicious additions.


Here's what you'll need:

  • 3 ripe bananas (mashed)

  • 2 eggs

  • 1 cup rolled oats

  • 1/2 teaspoon ground cinnamon

  • Pinch of salt

  • 1/4 cup milk (any kind!)

  • Honey, to taste

  • Peanut butter, for topping

  • Fresh berries, for topping


Step 1: Mash those bananas!

In a large bowl, mash your three ripe bananas with a fork until they're nice and creamy.

Step 2: Whiskaway!

Crack your two eggs into the bowl with the mashed bananas and whisk them together until well combined.

Step 3: Dry ingredients party!

Now, add your dry ingredients: 1 cup rolled oats, 1/2 teaspoon ground cinnamon, and a pinch of salt. Give everything a good whisk to make sure it's all incorporated.

Step 4: A splash of milk

Pour in your 1/4 cup of milk and stir it in until the batter is just combined. You don't want it to be too runny, but it shouldn't be super thick either. If it seems too dry, add a splash more milk.

Step 5: Sweeten it up!

Finally, drizzle in some honey to taste. Start with a little and add more until you reach your desired level of sweetness.

Step 6: Baking time!

Preheat your oven to 190°C (gas mark 5). Lightly grease a baking dish (or individual ramekins) and pour your oat mixture in.

Step 7: Top it off!

Here comes the fun part: toppings! Dollop some peanut butter on top of the baked oats, then add a generous handful of your favourite fresh berries.

Step 8: Bake and enjoy!

Bake your banana baked oats for 25-30 minutes, or until they're set and golden brown on top. Let them cool for a few minutes before digging in and enjoying your warm, delicious breakfast!


Cody's Top Tip: Serve alongside some fresh greek yoghurt for a healthy 'desserty' feeling!


More tips:

  • Want it extra gooey? Add a few chocolate chips to the batter before baking.

  • No milk? No problem! You can use water or even unsweetened applesauce instead.

  • Don't have fresh berries? Chopped nuts, dried fruit, or a sprinkle of granola would be tasty alternatives.

  • Leftovers? Baked oats store well in the fridge for a few days. Simply reheat in the microwave for a quick and satisfying breakfast on the go.
